ENZYMATIVE ACTIVITY OF LACTIC BACTERIA ISOLATED FROM FISH AND SHRIMP

Abstract. From healthy representatives of aquaculture objects, 32 isolates of lactic acid bacteria were isolated. Their enzymatic activity (amylase, protease, lipase, gelatinase, catalase, hemolysis) has been characterized to assess their safety and value as feed additives. As a result, 31 of the safest strains of lactobacilli from 32 strains were selected in our study for further research.
