Abstract. Vegetables are an important food product and have extremely useful nutritional, dietary and healing properties. They contain carbohydrates, proteins, amino acids, vitamins, essential oils, organic acids, potassium, sodium, phosphorus, calcium, iron salts and other substances that play an important role in the digestion of food consumed by a person. At present, the volume of vegetable products grown in Uzbekistan is 2.35-2.5 million tons. tons, and a certain part of it is exported abroad. So, each inhabitant of our country now needs less than 100 kg of vegetables.
